The explicit object turns the statement into Paul’s familiar thanksgiving-to-God formula; the shorter form leaves the recipient understood from context.

Why this default

The shorter ‘I give thanks’ is the pinned SBLGNT base and agrees with WH; Paul’s object is readily supplied from context, while the explicit ‘to God’ remains available because Tregelles, NA28, and RP print it.
